My twenty plus years of experience in the restaurant industry spans fast food, institutional feeding, upscale dini. This book is helpful to non-restaurant people only. Although there was much information in the book, much of it was for a complete restaurant novice. I would hope that someone with that little experience would not go into the restaurant business. The book was good for a "once-over" look, but I don't know if I will be keeping it. A little disappointing.. A Customer said EXCELLENT -- FOR ANY RESTAURANT START-UP. After reading a friend's copy, and seeing how useful this book is, I had to buy my own copy. I read it again and still refer to it for ideas.
